Spinach & Black Bean Burrito
With black beans & avocado (two more superfoods), it’s a superfood bomb. Heating the tortilla before adding the toppings makes all the difference. This is a great one for the lunchbox.
ingredients makes 2 wraps or tortillas (we love Mountain Wraps)
- 2 cups raw spinach
- ½ cup Easy Black Beans
- ¼ cup Pico de Gallo
- 1 avocado, peeled & sliced
- 1 lime
- sea salt
- freshly ground pepper
- sour cream (optional)
- hot sauce (optional)
1.Lay each warmed tortilla on a flat surface. Divide black beans, spinach and avocado to the middle of the wrap (leaning more toward one side for ease of wrapping). Squeeze some lime over the toppings and fold top and bottom of wrap inward, holding each fold as you roll into a wrap.
2.Serve with Pico de Gallo, sour cream and hot sauce.
